Scoop out merliton leaving the shell. Chop up the insides.
Saute onions in butter. Add shrimp. Add garlic, merliton, salt, pepper and red pepper. Dip bread in water; squeeze dry and crumble. Add bread to rest of stuffing ingredients. Add two eggs for binding.
Stuff merliton shells. Sprinkle on breadcrumbs.
Bake at 350 for 15 minutes. Garnish with additional shrimp.
