1 gallon chopped and peeled tomatoes
|
|
2 large onions, finely chopped
|
|
2 large green peppers, finely chopped
|
|
5 - 6 ribs of celery, finely chopped
|
|
1/2 cup salt (not iodized)
|
|
2 cups sugar
|
|
2 cups vinegar
|
|
2 teaspoons mustard seed
|
|
|
|
2 teaspoons celery seed
|
|
1/2 teaspoon cinnamon
|
|
1/2 teaspoon ground red or black pepper
|
|
|
|
|
|
|
|
|
|
|
|

|
|
|

|
|
|

Instructions |
|
|
Add first 5 ingredients to a large bowl.
Soak vegetables 2 - 3 hours in salt, then drain.
|
|
|
In a large pot, combine next 6 ingredients.
Boil vinegar mixture 3 minutes. Add vegetables and heat to hot.
|

|
Cool, place in jars, and store in refrigerator.
|
