1/2 cup chopped sweet red pepper (green tastes good, too but the red is nice for color)
1 tsp. butter, plus 2 tbsp. butter softened, divided (optional)
2 cups shredded zucchini (or 1 cup zucchini, 1 cup yellow squash, shredded)
2 tbsp taco seasoning
8 7 inch flour tortillas
8 ounces pepper Jack cheese, shredded (or Mexican cheese - I used the Mexican cheese for it)
Instructions
In a skillet, saute onion, garlic, and red pepper in 1 tsp of butter for 3 min. Stir in zucchini (or zucchini and yellow squash) and taco seasoning; saute 3-4 min. longer or until veggies are tender. Remove from heat.
In another skillet, over medium heat, place tortilla. Layer cheese, 1/4 of zucchini mixture, cheese, and another tortilla. Cook for about 1-2 min. on each side. Serve with salsa, sour cream, and guacamole.
