1/22 medium head green or Savoy cabbage (abt 1 lb) cored and very thinly sliced
1 Tbsp. tomato paste
1/2 cup water
1 lb macaroni
grated parm
Instructions
In a 2-3 quart saucepan or casserole, over medium to low heat, combine the oil and garlic. Cook the garlic, pressing into the oil a couple of times to release its flavor, until it barely begins to color on both sides. Remove the garlic.
Add the sausage, raise the heat slightly, and with the edge of a wooden spoon, break up the meat into small pieces. This gets easier as the meat cooks. Continue to cook and and break up the meat until it begins to brown, in 3 or 4 minutes.
Add the cabbage and mix well. Cook uncovered, about 3 minutes, mixing occasio nally. The cabbage should be wilted. (It will probably not be necessary to add salt and pepper because the sausage is well seasoned.)
Cook the pasta unti al dente in plenty of boiling, salted water. Toss thepasta with the sauce and serve immediately. Garnish with grated cheese.
