At least 2 hours before serving- Pre-heat oven to 350 degrees. Grease muffin tin pan. Measure all ingredients into a largo bowl. Mix at low speed until well blended. Increase speed to high 2 minutes.
Spoon batter into cups. Bake at 18 to 20 minutes or until toothpick inserted into center of cupcake comes out clean.
Cool in pans on wire racks 10 minutes. Remove from pans and cool completely. Frost when cool.
Chocolate frosting goes well on these.
