Heat olive oil in cast iron skillet over medium heat. Cook garlic until golden. Add garlic, pesto, cilantro, lime juice to food processor; pulse until smooth. Season with salt & pepper.
Heat tortillas over open low flame, turning once, to soften, not to cook.
Spread pesto blend on tortillas. Top with cheese. Firmly roll up tortillas, set aside.
Heat 1/4 inch peanut oil in skillet. When shimmering, add rolled flautas, seam side down. Work in batches. When golden, turn flautas with tongs, frying each side. Drain on paper towels.
Suggestion- flautas can be used as appetizers, cut into 2 or 3 pieces, or as a side dish with a Mexican dinner.
