Brown chicken pieces in oil; remove from pan and set aside. Add chopped onion, bell pepper, and mushrooms to pan and brown.
Mix tomato paste, water, thyme, oregano, and olives to make a sauce.
Put chicken back in pan with onions, bell peppers and onions.
Spoon sauce over all. Cover and simmer 45-60 minutes until chicken is done. Serve over macaroni, rice, or spaghetti.
This can also be made in a dutch oven.
