Cook potatoes in their skins. cool, peel, and grate into a 1 1/2 qt. buttered casserole, salting and barely dusting with pepper after each potato. Cover tightly with plastic wrap and chill 8 hours to overnight.

To bake, heat oven to 350 , pour cream all over potatoes, & bake 1 hour. If using a clay or china baker, set at room temperature 20 minutes and start in a cold oven. This will hold, covered, for 15 minutes. Simple but excellent several qualities make it a great company potato dish.
Serves 4, if doubled, use a larger but not much deeper baker. Amazing with Swiss Bliss Baked Steak. Also Slow Cooker Short Ribs or any pork roast.
