2 slices crisp bacon - crumbled (regular or turkey)
1 lb boneless skinless chicken breasts, cubed
2 bunches of green onion, cleaned and sliced
1 box of Barilla Plus or whole wheat bow tie pasta
1 can reduced sodium chicken broth
1 T smart balance buttery spread
1 clove minced garlic
salt and pepper to taste
2 T grated fresh parmesan cheese (optional)
Instructions
My sister's family was tired of chicken for dinner. So when the 13 year old asked what was for dinner, she told him she was cooking Iguana. He went to school the next day and told everyone they had eaten iguana for dinner! It was years before he realized one of his favorite recipes wasn't iguana, it was the dreaded chicken.
Prepare bacon to crisp, crumble and set aside, reserving 1-1 1/2 T of grease. Cook pasta (no added oil) according to package instructions.
While pasta is cooking, stir fry chicken and green onions in either the reserved bacon grease of 1T of extra virgin olive oil if using turkey bacon. When chicken is cooked, add 1T of smart balance, 1 can chicken broth, to the chicken and onion mixture.
Drain the cooked pasta, toss in the chicken and onion mixture along with the crumbled bacon. Serve with a crisp leafy green salad for a hearty but healthy family dinner.
