Cooked vegetables such as potatoes, zuchinni, asparagus, broccoli or green beans
Raw vegetables such as spinach or tomatoes
Any cooked meat you prefer such as, ham, bacon or sausage.
1-2 tablespoons butter or margarine
1/2 cup cheese of your choice
Salt and pepper
Instructions
Saute vegetables (onions, mushrooms, asparagus etc..) in 1-2 tablespoon butter or margarine.
The size of your frittata will depend on the amount of vegetables you incorporate.
Use no-stick spray to coat a pie pan or tart dish.
Pour in eggs and add seasonings.
Mix in vegetables, meats and top with cheese.
Bake 25-30 minutes in 350 oven until knife inserted in center comes out clean.

A very versatile breakfast. Use leftover veggies and skip the saute. Serve with fresh fruit and toasted croissants for an elegant brunch.
