1 pkg Uncle Ben's Original Recipe Wild Rice
|

1 rotisserie chicken, shredded
|
|
1 yellow onion, chopped
|
|
3 big carrots, shredded
|
|
3 celery sticks, chopped
|
|
1 can fat-free evaporated milk
|
|
8 cups chicken broth
|
|
salt and pepper
|
|
1/2 stick of butter
|
|

Instructions |
|
|
In a large pot, cook all the veggies in the butter until soft. Once soft, add the flour and make a roux.
|
|
|
Slowly add the broth until all is in and there are no clumps. Bring to a boil then add the milk.
|
|
|
Add rice (cooked according to package directions) and then chicken and let boil for a few minutes.
|
|
|
Allow the soup to fully cool off then re-heat to serve. Add salt and pepper to taste.
