fry the bacon in a small bit of olive oil. remove and keep in warm oven.
sear scallops (can be covered in seasoned flour, but not nessary) 1 1/2 min per side. remove and put in warm oven
add some butter if not enough bacon fat. add one chopped scallion. deglaze pan with noilly prat;
add spinach and stir til wilted (2 min). stir in balsamic vinegar; add scallops; but bacon bits and give a shot of peopper and serve with boiled potatoes
