Preheat oven to 400 degrees. heat the oil in a frying pan and add the onions. Saute for 3 minutes and add the celery and carrots. Saute 5 minutes over medium high heat.
Mix the vegetables into the ground veal. Add the parsley, bread crumbs, nutmeg, egg and salt and pepper. Mix well.
Lightly oil a baking sheet or dish. Divide the mixture in half and mold into 2 loaves on the sheet. Place in the oven for 15 minutes. Serve immediately.
