1 bay leaf…6 sprigs parsley…1 sprig thyme - tied together
1 c. white wine
1 ˝ oz. brandy
2 large tomatoes- peeled, seeded and chopped fine
12 mushroom caps- quartered
chopped parsley
Instructions
In a plastic bag, mix the salt, pepper and flour and dredge the chicken pieces therein. In a large skillet, heat the oil and butter and add the chicken. Cook the chicken until brown all over.
Transfer the chicken to a large casserole and add the remaining ingredients, except the parsley and mushrooms. Cover and cook for 30 min. add mushrooms and cook another 10minutes. Uncover, sprinkle on the parsley and garnish as you choose.
