1/4 - 1/2 Large jar roasted red peppers (to taste)
2 Tbsp Olive Oil
Instructions
Heat olive oil in a skillet. Brown chicken on both sides 5-6 minutes each.
Blend roasted red peppers and cream in blender or food processor. Add mixture to chicken once they are browned. Simmer until cream reduces (about 15 minutes).
Remove chicken to plate, add sour cream to red pepper cream mixture. Serve chicken over rice with cream on top!
