In large mixing bowl combine 2 cups flour, and yeast. In saucepan, heat milk, sugar, shortening and salt until warm. Add to dry mixture, add egg and mashed potato. Beat at low speed for 1/2 minute. Beat 3 minutes on high
Stir in enough of the remaining flour to make a soft dough. Turn out onto lightly floured surface and knead. Place in lightly greased bowl turning once. Cover and let rise till double about 1 hour. Shape into rolls, coat with melted butter. Cover and let rise till almost double
bake at 400 degrees for 10-12 minutes. Coat with melted butter again. let cool before storing.
