Chop all of the vegetables, for the tomatoes peel then chop them. Heat 6 tbsp olive oil in a pot then add the onion and carrot. Next add the celery and saute. Add all of the stock and skim off any foam. After skimming off the foam, add the chopped zucchini. Add the cabbage, potato and tomato and simmer over low heat for 10 minutes. Add the spinach and season with salt and pepper. Garnish with cheese and parsley.
