Chop all vegetables to bite sized or smaller. (This can be done the night before and stored in the fridge)
In crock pot put a layer of the veggies down. Then throw the pre-chopped beef in on top. Add the can of tomatoes, then on top of that add the rest of the veggies to the rim of the crock pot.
Add the garlic, all dry ingredients, and then pour beef stock over top. Set on low, and let cook for 6-8 hours. Add salt, pepper, and any other spices you desire to taste!
