-Preheat Oven to 400 degrees. Heat up oil in pan, about 1/2 inch deep. Dip peeled eggplant in egg and bread crumbs. Brown in pan. Add garlic to crushed tomatoes. Spread a little along bottom of baking dish. Add browned eggplant. Cover one layer with sauce, add cheese. Add second layer of eggplant, repeat. Leave in oven for about 20 minutes or until cheese is slightly brown.
