     Curried Pumpkin Mushroom Soup

Ingredients
1/2 pound mushrooms, sliced
1/2 cup chopped onion
2 T unsalted butter
2 T flour
1 T curry powder
3 cups canned chicken or vegetable broth
1 pound can of pumpkin puree
1 T honey
pinch of nutmeg
 
1 cup heavy cream

Instructions
Cook mushrooms and onion in butter until onion is soft. Add flour and curry powder and cook over low heat, stirring occasionally for 5 minutes. Remove from heat, add stock while whisking, and stir in pumpkin, honey, nutmeg, salt & pepper to taste. Simmer soup for 15 minutes, then stir in cream. Reheat until hot, but don't let it boil.
