Using a mandolin, slice the onion on the thinnest
setting possible. Add to a bowl and sprinkle about
0.5 to 1 Tb of kosher salt. Set aside for about 20
to 30 minutes. Then squeeze the onion to get rid of
any liquid.
Roll the ground beef into the size of 4 golf
balls.
Can combine 2ts of kosher salt, 0.5 ts of ground
black pepper, and 1ts of garlic powder to make the
burger seasoning. Or you can use any seasoning
available. I used The Blend from Kinders.
Combine all the ingredients for the sauce into a
small bowl or use just whole grain mustard.
Spread some sauce (or whole grain mustard) on to
the top bun.
Be sure you prepare all the ingredients because
the cooking process is pretty fast. Put all the
ingredients onto a baking tray on a piece of foil.
Ground beef balls, drained onions divided into
four parts, burger seasoning, cheese, pickles,
buns.
Heat your cast iron or griddle onto high heat.
Add only a little bit of oil. When hot, add the
ground beef on to the griddle. Add some burger
seasoning. Then top with onions and smash out the
burger really thin with the spatula. Let cook for
3 to 4 minutes, then flip. Top with cheese and
pickles. Then add the top bun. Cook for another
3 minutes. Put the bottom bun on the grill to
crisp up.
Throw away the foil from the baking tray. Place
cooked bottom bun on the baking tray. Top with
the burger and top bun. Serve immediately.
