Cut strawberries into pieces. Set aside 1/3 or the strawberries.In a saucepan over low-medium heat, combine 2/3 of the strawberries, sugar, and vanilla. Heat, stirring occasionally, until sauce thickens to desired consistency. Remove from heat, and let cool. In a blender puree the sauce. Mix in remaining 1/3 of strawberries. Store in refrigerator.

I went to a local seller to buy my strawberries, so I just eyeballed how many to use because I bought a whole big box of them. It seemed to me that the sauce wasn't thickening, but it will once you take it off the heat and puree it. I also added a few more strawberry pieces than just the reserved 1/3.
