Saute onions and celery in butter. Add flour and mix well. Let cook for 2-3 minutes, stirring constantly. Add ½ and ½ and stir until thickens. Adjust thickness with more ½ and ½ if necessary. Add cream cheese and cook until incorporated. Add white wine and crab meat. Season with salt and pepper. Pour dip into oven proof baking dish and bake at 300 for 10 – 15 minutes or until top browns.
