8 (12 inch) tortillas (I use flour but you can use corn)
Sour cream & enchilada sauce (optional, for serving)
Instructions
Saute onions in olive oil until soft. Add tomatoes, cream cheese, and cheddar cheese. Cook on medium until all ingredients are melted and blended together. Add the black beans and chicken and stir until combined and heated through.
Arrange chicken mixtgure evenly down center of tortillas. Roll up and place seam side down in a lightly buttered 9 x 13 baking dish.
Bake uncovered 20-30 minutes. Sprinkle extra cheese on top and bake another 5 minutes.
Serve with enchilada sauce and sour cream.
