2 lbs. vine ripened tomatoes

3/4 lb. fresh mozzarella, cubed and room temperature

1 1/4 c. chopped basil
|

1/2 c. black olives, halved and pitted (optional)

4 tsp balsamic vinegar

|
1 1/4 tsp salt
|
|
1/2 tsp black pepper
|
|
1 lb. spaghetti

1/2c olive oil

in large bowl, combine chopped tomatoes, mozzarella, basil, olives, balsamic vinegar, salt, and pepper.

In large pot of boiling, salted water, cook spaghetti until just done, about 12 minutes. Drain, add to tomato mixture, and toss.

Heat the oil in a small frying pan over moderately low heat. Add the garlic and cook, stirring, for 1 minute. Pour the oil over pasta and toss again.
