Pour fudge topping into med bowl. Stir in 1 c Cool Whip with wire whisk until well blended. Add dry pudding mix, blend well. Chop cookies into chunks, stir into pudding mixture.
Arrange 4 sandwiches, side by side, on a 24x12” piece of foil; top with ½ of pudding mixture. Repeat layers. Top with remaining 4 sandwiches.
Frost the top and sides with remaining Cool Whip. Bring up sides of foil. Double fold top and ends to loosely seal the packet. Freeze at least 4 hours before serving.
Let stand at room temp. to soften slightly before serving.
