Heat 2 T of the olive oil in a medium size saute pan over med.
heat. add the shallots and cook, stirring for 30 sec. Add the
mushrooms and cook, stirring for 2 min, then season with salt
and pepper. Add the garlic and prosciutto and cook, stirring for
1 min. Remove from heat and pour into a medium size mixing
bowl. Stir in 3/4 of the cheese and let it cool completely.
