Mix together warm water, 2 Tbls honey and yeast. Let sit until bubbly. Add flour, whole wheat flour, and salt. Knead dough for 5-8 minutes. Place dough in greased bowl, cover and let rise until double, about 45 minutes.
Punch dough down and divide into 6-8 pieces. Shape each piece into a ball. Poke a hole in the center and pull gently to enlarge the hole, working each bagel into a uniform shape. Let rest 5 minutes on a lightly floured surface.
Add 2 tsp honey to 3 - 4 quarts boiling water. Place bagles, 2 or 3 at a time, in boiling honey water. Adjust heat so water is simmering all the time. After 2 minutes, turn bagels over and allow to simmer for 2 more minutes. Remove bagels from water with slotted spoon. Place them 1 inch apart on a greased cookie sheet. If desired, brush bagels with mixture of 1 egg and 1 Tbls water for a shiny finish.
Bake at 400F for 20 minutes or until crusty and golden brown. Cool on wire racks. Variations- After first rising, and before dividing into pieces, knead one of the following into the dough- Cinnamon-Raisan Bagels, 1/2 cup raisans and 2 Tbls cinnamon. Sesame or Poppy Seed Bagels, 2 Tbls sesame or poppy seeds.
