1 (15 to 16 oz) can pineapple tidbits Juice reserved
2 Tbsp. reduced sodium soy sauce
1 Tbsp & 1 tsp. cider vinegar
2 tsp. cornstarch
1/2 cup pineapple juice reserved from pineapple
2 tsp sesame , peanut or olive oil
1 1/2 lb chicken or pork tenderloin (rotesserie chicken)
2 cups fresh or frozen bell pepper strips
Instructions
Drain pineapple, reserving 1/2 cup juice. Set Pineapple aside. In small bowl combine reserved juice, the soy sauce, vinegar and cornstarch stirring until cornstarch is dissolved. In Wok or frying pan heat oil over high heat.
Add Pork or Chicken, stir fry until well browned -5 to 10 minutes. If using chicken saute peppers then add pineapple and reserved juice mixture, bring to a boil then add chicken. Reduce heat to low and simmer about 5-8 minutes, stirring occasionally. Simmer 8 to 10 minutes if using pork. Serve immediately. Great over rice.
