1 1/3 cups snow peas, ends trimmed and cut into 1 inch pieces
1 cup chopped bok choy
3 green onions (white/green parts) coarsley chopped
1/4 cup soy sauce
1/4 cup seasoned rice vinegar
2 1/2 tsp seasame oil
black pepper
1 pound udon noodles
hot pepper sauce
Instructions
In large pot, combine veg stock/snow peas/bok choy/green onions/soy sauce/vinegar/sesame oil/black pepper. Bring to boil over medium-high heat. Reduce heat to low and cook uncovered for 5 mins until veggies are tender.
Add noodles. Increase heat to medium and bring to a boil. Reduce to low and simmer uncovered for 5 minutes or until noodles are tender. Season with hot sauce.
