Use a steel shish kabob skewer to remove the membrane of the back of the ribs. To do this, slide the point between the membrane and meat and slowly lift up. Grab the membrane with your fingers and peel away from the ribs. Cut each rack of ribs in half.
To make the rub, mix together paprika, brown sugar, pepper, and salt. Ona large cutting board, lay out the ribs and generously pur rub all over both sides of the ribs. Use 4 foil roasting pans and double them up so u have a total of 2 pans. Place 6 half racks of ribs in each pan. Sprinkle onion and garlic over each half rack of ribs. Cover with foil.
Preheat grill to 300. Place both pans on the lower cooking surface. Close lid on grill and roast for 2-2 1/2 hours. Check ribs every half hour after the first hour. Spoon juices over ribs when you open the foil to check their progress. Remove pan and let ribs rest, uncovered for 10 minutes.
Turn grill up to medium. Place ribs, bone side down, on lower cooking surface. Turn ribs as needed (every 5 - 7 minutes). Cook for and additional 30 minutes. At the end, baste both sides with bbq sauce and cook for 5 minutes.
