Use hands to crumble tofu into medium sized bowl. Pour lemon juice over tofu; add salt. Gently stir to coat. Allow to sit. Soak sun dried tomatoes in water; cover; set aside 20 mins.
Arrange lettuce on plates, sprinkle with basil, bell pepper, cucumbers, olives, onions, and capers. Whisk together all dressing ingredients. Transfer to serving dish if using.
Drain sun dried tomatoes, slice into thin strips or dice. Top salads with marinated tofu and sun dried tomatoes.
