1/2 of a 10 oz. package frozen chopped spinach, thawed and drained
3 T. pine nuts or walnuts, toasted
3/4 c. shredded smoked mozarella cheese
1/4 c. seasoned bread crumbs
1/4 c. grated parmesan cheese
1 T. olive oil
Instructions
Place 1 chicken breast between 2 pieces of plastic wrap. Pound to 1/8 inch thickness. Remove from plastic wrap. Season with salt & pepper. Repeat with remaining chicken.
In a medium skillet, cook onion & garlic in 2 t. hot oil til tender. Remove from heat & stir in spinach, nuts, & mozzarella. In a small bowl, combine bread crumbs & Parmesan cheese.
Fill each breast with 2 to 3 T. of filling & roll. Secure with toothpick. Lightly brush each roll with the 1 T. olive oil. Coat with bread crumb mixture. Place rolls, seam side down in shallow baking pan. Bake, uncovered 400 degrees about 25 minutes until tender and no longer pink. Remove toothpick & serve.
