Preheat the oven to 350F. Sweat the onions and garlic in some olive oil and salt with the poultry. Once the poultry is kinda cooked, pull it out and shred it. Then put it back in the pan.
Once the poultry is cooked through, turn off the heat. Add the rice and the beans and the spinach.
Put the mix in an 8x11 pan, lay the tortillas on top. Cover in salsa and/or chili. Cover in cheddar cheese. Bake until warm through and the cheese is melty bubbly.
