In a large bowl, mash 1 cup of potatoes with a fork; add remaining ingredients and mix well; season with salt and pepper; allow flavors to blend at least 3 hours.
Preheat large skillet over medium high heat and add 4 tablespoons butter; when foaming subsides, add hash mixture and press firmly over bottom of skillet.
Cook until hash begins to brown on bottom, about 4 minutes; reduce heat to medium and continue to cook until well browned; turn hash to brown top, continuing to cook until of desired crispness.
