3 oz. baked garlic herb Italian tofu
2 cups mixed salad greens
1/2 medium fresh tomato
1/2 cup chopped or sliced cucumber
1 tbsp. fresh shredded carrots
2 tbsp. salad dressing, low fat or nonfat; low sodium
Chop tofu into bite sized cubes. Rinse and chop salad greens and tomato. Place tofu, greens and vegetables in a salad bowl, add dressing, toss well and serve.
Also Include- 1 slice low sodium whole wheat bread
4 oz. low fat, dairy-free yogurt (soy)
1 1/2 cups cantaloupe
