1 - 1 1/2 lbs ground beef or chicken
|

1 medium onion
|
|
2 tbsp garlic
|
|
1-2 chopped jalapeno or 1 pasilla pepper
|
|
1 large chopped bell pepper
|
|
1 small can tomato paste
|
|
1 can diced tomatoes (or fresh equivalent)
|
|
1 can kidney beans
|
|
1 tsp salt
|
|
|
|
1-2 tsp chile powder
|
|
1-2 tsp cumin (to start with. I end up adding about a tablespoon, but do to your taste)
|

1 tsp oregano
|

Instructions |

|
Brown meat with onion and peppers until done, then add garlic and cook for 2-3 minutes.
|

Add tomatoes (don't drain the can), tomato paste, beans, and seasonings. Bring to a boil, then down to simmer for 15-25 minutes
|

Suggestions |
|
Throw over fritos, tortillas, or just top with cheese and eat. !!NOTE!! Pasilla peppers are milder than jalapenos. Leave seeds in for extra heat.
