1 jar (6 oz) marinated artichoke heart quarters, drained
1/2 c. chopped fresh parsley (optional)
Instructions
Place peas and 1/4 c. water into Lg. micro wave bowl. Microwave,
covered on high 2 t0 3 mins or til crisp tender. Drain, rinse under
cold water & set aside. Slice potatoes; place potatoes, salt & 4 c.
water into micro bowl. Microwave, covered on hight 13 to 16 mins
or til tender, stirring twice, drain and set aside.
Meanwhile, heat grill pan over med heat 5 mins. Rub chicken with 1
T. of rub. Spray pan with olive oil. Cook chicken 7 to 9 mins. or til
temp. registers 165o F and juices run clear, turning once. Remove
from pan; set aside & keep warm.
For dressing, juice lemon to measure 2 T. Combine juice,
remaining rub & garlic. Slowly add oil, whisking constantly; seat
aside.
Thinly slice chicken, bell pepper & onion. Combine peas, checken,
bell pepper, onion, artichokes & parsley, mix well. Add potatoes
and dressing; toss gently.
