1 piece preserved stem ginger, plus 2tbsp syrup from the ginger jar

scant 1/2 cup natural muesli (granola)

scant 1 cup semi-skimmed (low-fat) milk

Instructions |

|
Using a sharp knife, chop the dried apricots into
the slices or chunks. Chop the preserved ginger.

|
Put the apricots and ginger in a blender or food
processor and add the syrup from the ginger jar with
the muesli and milk.

|
|
Process until smooth, adding more milk if necessary,
to make a creamy drink. Serve in wide glasses.
