1 3/4 cup water
|

1 cup sugar
|

4 tbsp corn starch
|
|
1 lemon (juice and rind)
|
|
1 tbsp. butter
|
|
pinch of salt
|

2 eggs

Instructions |
|
|
Boil water. Mix sugar, corn starch, and salt. Pour
water over mixture. Cook until thick.
|
|
|
Beat egg yolk and pour small amount of boiled
mixture over eggs and stir. Cool about 1 minute.
Return to stove and add butter, lemon juice, and
rind.

Let cool and pour into pie shell.
