1 dozen hard-boiled eggs, peeled
|

3 Tbsp. mayonnaise
|

1 Tbsp. lemon juice
|
|
3 Tbsp. fresh chives, chopped
|

4 slices bacon, cooked and chopped (or bacon bits)
|
|
2 tsp. dried tarragon
|
|
1/2 tsp. dried mustard
|
|
salt and pepper to taste

Instructions |

|
Slice bottom off each egg, exposing yolk. Cut a small sliver off
pointed end of egg (top) to help it sit upright.
|

Scoop out yolks into bowl. Arrange whites on serving tray, or place
each in an individual egg cup, hole end facing up.
|
|
|
In separate bowl, mash yolks and add remaining ingredients, then
stir well to combine.
|
|
|
Use a pastry hag-- or a plastic bag with a bottom corner snipped
off-- to pipe mixture into each egg. Garnish with remaining chives.
