Grease and flour two 8-inch cake pans. Preheat oven
to 375. Beat egg whites until foamy; gradually add
1/4 cup sugar; continue beating until stiff peaks
form.
Sift dry ingredients together (using remaining 1 cup
sugar). Beat shortening to soften; sift in dry
ingredients. Add milk and vanilla; mix until
combined. Beat for 2 minutes.
Add egg white mixture; beat 1 minute longer.
Turn into pans. Bake for 25 minutes.
Frost with Seven Minute Frosting.
