Place chicken pieces in a large pot. Cover with
water, and add chicken boullion cubes, 1 Tbs. salt,
and some black pepper. Boil until tender, about 30
minutes. Remove to a plate. Turn up burner to bring
broth to a boil.
For the dumplings, Take a bowl with about 2 cups
flour in it. Make a well in the center. Add the
salt and mix. Then add the shortening and water.
Mix well, like making biscuits. Knead about 12
times. Roll out as thin as a knife blade and cut
into small squares.
Add dumplings a few at a time to chicken broth that
is at a high boil. Add black pepper after each
addition. After adding all dumplings, let simmer,
covered for about 15 minutes or until done.
Once done, turn off burner and let sit for a few
minutes before serving.
