1-3 sweet potatoes, peeled and cut into 2 inch pieces

Instructions
Place the cut up sweet potatoes into a pot and cover with cold
water. Bring water up to a boil, then season with 1/2 teaspoon of
salt. Boil 15-18 minutes on high, making sure you can mash them
pretty easily with a fork.
Drain the potatoes into a collander, reserving 1/4 cup of cooking
water. Pu the potatoes back into the pot, along with the 1/4 cup of
cooking water and mash with potato masher. Serve!
