2 lbs pork, cut up into 1/2 inch diced
|

1 lb beef, cut into 1/2 inch diced

2 T salt
|

3 T ground cumin
|
|
1 T ground black pepper
|

6 garlic cloves, minced
|
|
2 medium serrano chilies, finely chopped
|
|
5 ancho chile pods, seeded, stemmed and minced
|
|
1 t sugar
|
|

1/4 c chili powder
|
|
1/4 c flour
|
|
3/4 c melted vegetable shortening or lard
|

Instructions |

|
Heat 5 1/2 cups water in a soup pot over high heat. Add the meats, salt, cumin, pepper, garlic, chiles, and sugar and bring to a boil.

Reduce to a simmer and cook for 35 minutes. Add the chili powder and simmer for 30 minutes more.
|
|
|
Combine the flour and the melted shortening in a bowl and stir until smooth. Add to the cooked chili and cook until thickened, 2 to 3 minutes.
