Salt and pepper Tilapia. In a skillet, place 2 Tbsp. olive oil and heat on medium heat.

Add tilapia pieces, as many as will fit in pan, and saute several minutes on each side, turning carefully so as not to break the fillets.

|
After turning cook fish 1-2 minutes and then pour about half of the tomatoes over the top and add half the lime juice. Correct seasonings and continue to cook until tomatoes are heated through.

|
Remove to a plate and place in a warm oven until all fish is cooked. Cook rest of fish, using the remainder of the tomatoes and lime juice. Serve over rice.
