1 Onion, chopped

2 cloves Garlic, chopped

1 Carrot, sliced
|

1 Green Pepper, sliced

1 Brinjal, diced

1 Chilli, chopped

|
2 tsp (10ml) Paprika
|

1 Tbsp (15ml) ground Cumin
|

Salt and milled Pepper
|

1 can (410g) Chickpeas, drained
|
|
Olive Oil, for frying
|
|
4 Tomatoes, seeded and chopped
|
|
1 cup (250ml) Peas
|
|
2 Tbsp (30ml) Butter
|
|
½ cup (125ml) chopped Mint
|
|
|
|

|
|
|
|

Instructions |
|
|
Prepare couscous as per instructions.
|
|
|
Fry onion, garlic, carrot, pepper, brinjal, chilli and spices. Season.
Add chickpeas and couscous and mix well.
|
|
|
Add tomatoes and peas and cook for another 30 minutes.
|
|
|
Fluff couscous and fork through butter and mint before serving.
