For sauce stir together apple butter, vinegar, honey, salt, and pepper; heat through, stirring constantly.
Meanwhile, in large saucepan add sausage links to boiling water. Reduce heat and simmer, covered, for 10 minutes; drain.
Cut links crosswise into thirds.
Cook onions, uncovered, in boiling water for 5 to 7 minutes or till nearly tender; drain.
On eight 10-inch skewers alternately thread sausage pieces, onions and mushroom caps.
Grill over hot coals for 12 to 13 minutes, brushing with sauce and turning skewers often.
Before serving, garnish end of skewers with cherry tomatoes.
Pass remaining sauce at table.
