Instructions
In a large frying pan put some vegetable oil on 4/5(Medium Heat) open beans and put them into pan (Do not drain beans). Let simmer for about 10 minutes. Use potato masher to mash beans as they continue cooking over medium heat till beans thicken. Add salt, black pepper, cumin, curry, and chili powder to beans (be liberal). Turn off heat after thickening. Add olives.
Take off the outer layer of onion skin, chop finely and saute in oil before adding onions about 10 minutes on medium heat, then add the beans to the olive mix and stir.
Pour small enchilada sauce into sauce pan (dip each tortilla in the sauce first) then fill each with 2 tbsp. bean mix and roll into burrito then place in backing tray continue till all trays are filled.
Cover with the rest of the enchilada sauce, then cover with a mix of shredded cheddar and pepper jack, at 350 deg for 30 minutes. Let cool for 5 minutes before serving. Garnish with sour cream or guacamole sauce.
