For the queso sauce-
Melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1 minute. Add the milk, increase the heat to high and cook, whisking constantly, until slightly thickened, about 5 minutes. Remove from the heat and whisk in the cheese until melted; add the Parmesan and season with salt and pepper, to taste. Keep warm.
For the caramelized onions-
In a large non-stick skillet over medium high heat, melt butter. Once melted, add onions and sprinkle lightly with salt and pepper. Cook, stirring often, until onions are soft and caramelized.
For the burgers-
Fry the bacon in a sauté pan or hot griddle until crispy. Set aside.
Shape the ground buffalo with your hands into desired patty size. Grill burgers on a hot grill or heated sauté pan until golden brown on both sides and cooked through.
Put the burgers on the buns and top each with a few tablespoons of the cheese sauce, onions and Bacon.
